Its top compartment comes with 16 sixth-size food pans, which are made of clear polycarbonate, and it can also accommodate varying size pan configurations with divider bars, although these must be purchased separately. Backup ingredients can be stored in drawers in the refrigerated base.

Set by the operator, the temperature in the base and around the ingredient pans is held between 33 and 41 degrees Fahrenheit. Cold air is guided around the pans and drawers, so temperatures are consistent throughout. Mounted on castors, this True TSSU-60-16D-4-HC prep table is mobile, and locks are provided on the front set for stability.
