Description

Blodgett HV-100E

The Blodgett HV-100ESGL HydroVection convection oven comes with five stainless steel racks that can be positioned 10 ways. Five 18-inch-by-26-inch baking pans fit in the oven left to right since it has a standard depth, and the liner inside the cavity is made of stainless steel with coved corners to simplify cleaning. There is a drain inside the unit to collect excess condensation and waste water, which is cooled by a thermostatically-controlled quench system before it is released in the drain. Halogen lights enhance visibility to monitor the cooking process.

The control system provides a variety of cooking functions, from hot air to humidity with an additional cool down feature. Its hot air mode is ideal for baking and pastries, and the humidity control is adjustable in 5 percent increments. During any cooking cycle, the Hydroburst feature adds 100-percent humidity, and the four-speed fan control can be set on gentle, low, high, or turbo to suit a variety of applications. With cavity vent control, the operator can release steam as necessary by flipping a switch, and the most common recipes can be uploaded through a USB connection and stored in the control system

Access to the oven cavity is eased since the doors use a turnbuckle assembly that pulls one door open when the other opens. These doors have double-pane, Low-E glass panels to provide product visibility. The interior glass panel is hinged to simplify cleaning, and the handle on the Blodgett HV-100ESGL HydroVection convection oven is curved for comfort.
