Both the interior and exterior are made of rust-resistant stainless steel-a material that provides strength and streamlines the cleaning process.

The top-mounted convection system in this Carter-Hoffmwann HL8-1816 full-height heated holding cabinet evenly moves heat throughout the compartments, providing efficient warmth that reduces heat-up and recovery times. Its internal temperature can be controlled on the electronic system and set between 160 and 200 degrees Fahrenheit. On the digital display, operators can track the temperature, and an alarm will let the operator know if the temperature drops below a safe level for the food.
