Cleveland 21CET16 Description

The Cleveland 21-CET-16 SteamCraft Ultra 5 convection steamer cooks food quickly and gently at the relatively low temperature of 212 degrees Fahrenheit. It is suited for a wide variety of foods, including fresh or frozen seafood and vegetables as well as loose pack frozen or frozen block vegetables. This unit’s cavity is continuously vented and drained of condensation, so no unwanted flavors transfer from one food product to another.

Perforated hotel pans are recommended for cooking most food items in the convection steamer, though some foods should be prepared in a solid pan or perforated pan nested within a deeper solid pan. Such foods include rice, scrambled eggs, certain kinds of beef and meatloaf dishes, frozen casseroles, and pasta. The steamer can also effectively reheat vendor-prepared or cook-chill product.

The Cleveland 21-CET-16 convection steamer is made for countertop use and has a compact size and smaller power requirements than other models. All steam is generated inside the unit on the bottom of the steam compartment, and operators must pour 2 to 4 gallons of water into the cook compartment. The steamer’s design eliminates almost all water-related element failures, preventing the need for constant water treatment and deliming with caustic chemicals.
