The food covers and refrigeration system prevent wilting, spoilage, and bacteria buildup in order to serve customers safe meals. It uses forced-air technology to cool light product, such as vegetables, rather than cold-wall cooling, which is best for dense products such as cheese and meat. Users can store bulky items such as jars of sauce or dressings on the adjustable shelves, which have a wire design to facilitate consistent airflow throughout the unit. Because the table is constructed for front air discharge, operators can press it into a corner without worrying about rear or side ventilation space.
