Because the Vulcan V4B36S commercial gas range has four open-top burners on top, it can be used to cook a variety of products. These burners are one of the most popular ways to cook in a commercial kitchen so chefs are comfortable using them. Each burner has its own pilot and heat control knob, so they do not all have to be on at the same time, and the heat can be at different levels. Cast iron grates hold cookware over the burner flames; with large rear grates, the unit can hold stock pots. A crumb tray is positioned under the range top, catching food particles and other debris to ease cleaning.

A standard oven is in the base of this Vulcan V4B36S four-burner gas range. A conventional oven like this one does not heat as quickly or evenly as a convection oven because it does not have a fan, but it is commonly used to finish product cooked on the range with browning or melting. The oven temperature is adjustable from 150 to 550 degrees Fahrenheit on the thermostat. It comes with an oven rack that can be placed in three different positions.
