The Carter-Hoffmann CH600 cook and hold oven can accept six 18-inch-by-26-inch trays or approximately 80 pounds of meat. It is constructed of strong, corrosion-resistant stainless steel with turned-in seams that eliminate sharp edges, and its 2-inch-thick, high-density fiberglass insulation improves efficiency by containing heat. Ensuring the door will not be left open by accident, it is field reversible and has self-closing hinges. A water pan keeps the cabinet humid to prevent product from drying out, while 5-inch-diameter caster ease transportation.

The Carter-Hoffmann CH600 oven features independent digital controls. Its digital display shows the current temperature, and the unit has a maximum cooking temperature of 325 degrees Fahrenheit. It can hold items from 100 to 200 degrees Fahrenheit, while a blower fan even disperses heat inside the cabinet. Its gentle heating method helps seal the juices inside meats. It can cook items to a selected temperature with the probe or cook based on a timer.
